Egg and Bacon "Muffins"



I found this recipe via Pinterest from http://www.fatgirltrappedinaskinnybody.com/2011/04/bacon-egg-cups/ and they are the perfect grab and go breakfast!

I made these a month or so ago and they are amazing, so today I made another batch for this week. 

Here's what you need:

8 eggs
1/2 cup shredded cheese
1/4 cup milk
12 pieces of bacon
salt and pepper for seasoning
Makes 12

Preheat oven to 350.

Spray a cupcake tin with non-stick spray.  Line each cupcake opening with a circle of bacon.

Mix together eggs, milk and cheese in a bowl. Season with salt and pepper. 

Fill each cupcake opening about 2/3 full with the egg filling. I used a 1/2 cup measuring cup to fill each one. 

Bake for 30-35 minutes or until the eggs are no longer jiggly.
